Well, my husband and I cooked ungarisch Gulasch for the Dinner tonight.
It was delicious and we had a glas of red wine with it.  8)

Tonight I'm making beef and mushroom stew.  I grabbed a variety of mushrooms from the Asian market (oyster, king oyster, enokitake, and buna shimeji) and am cooking them up with some leeks, yellow and green onions, stew beef, chicken and beef stock, bean sprouts, and a splash of red wine.  I may toss a dash of miso paste in at the end for flavor but so far it seems like it won't be needed.

The thread started with Goulash and I add the Gulasch I made today.
It is made the traditional way as we are use to it over here since the days of the Empire. ;)
And I made some Nockerl (https://www.gutekueche.at/nockerl-rezept-35543) as per my daughters request as a side dish.

By the way: I love Nokerl! Sooooooo delicious 8)

We had Raclette tonight.

Today I made a Casserole with Potatoes and grounded meat.
Looks like it was good... half of it instantly vanished into the stomach of my 13 year old.  ;D

Sonds delicious  to me  :)
Oh yes Thessa, in this age they have a tremendous appetite especially if the menu is soooo delicious..........

We made Roggenbrot today, it is still warm.

Poached eggs and brown rice. I tried a new method of poaching the eggs and it turned out really nice!

I made cheese filled meatballs and tater tots for everyone else.

Sure. I used a sauce pan with about 4" of water in it, and two table spoons of vinegar. Bring it to a boil, then reduce to low heat. Use a spoon to stir the water so that you get a small vortex swirling in the middle. Then drop you egg in. The vinegar and the swirling motion help the egg retain its shape without getting a bunch of white wispy stuff.

I like my yolks runny, so 3 minutes turned out to be perfect. Use a ladle or spoon with holes in it to take the eggs out without a bunch of water.

Worked perfect! I was worried about trying vinegar because I thought it would effect the flavor, but it didn't.

I usually have three to four poached eggs when I decide to have them, so I use egg cups from a poacher I have. I put a little bit of butter in the cup and rub it around the inside; if I'm lazy or in a hurry, I spray a bit of Pam inside the cups before I put the egg in.

The set of 4 cups are stainless steel from a Revere Ware Poacher set of 6 cups. I only use the poacher if I need 5 or 6 eggs done at the same time. When I poach 4 or less I use the same cups prepped the same way except I use a Revere Ware steamer so there is no direct contact between the cups and the boiling water, just the steam.

I bring the water to a hard boil in the bottom pan; once boiling, I put the steamer on top with the lid on and let it go for the 3 minutes. If I hit the pay-dirt when I buy eggs, I'll get a dozen eggs that a very large; they take a bit of extra time to cook.

I used to have a farm, yes I have been a farmer as well as the many other things I have done. I had chickens (Peeps) I bought from Sears when they had their farm catalog. Half were red and the other half were white; they were hybrids, extremely large and they laid huge eggs. When I wanted to eat eggs I'd go out to the barn and into the coup and wait for a few chickens to lay 3 or 4 eggs. They were  too large for the poacher cups so I would fry them in bacon grease. The albumin (egg white) was very firm and didn't spread when in the pan like store bought eggs; once fried and out of the frying pan and on a plate, they looked like poached eggs just out of the cup. Have never seen chicken eggs as large as those were since leaving the farm and heading for Texas.

Tonight I made ABTs.

Take peppers, usually jalapenos, cut the top off, remove the core.  Pack the pepper with cream cheese, wrap the pepper with bacon (belly bacon, back bacon or ham would work but would be a much different texture), and cook in a smoker until the bacon gets crispy.

Well I don't have a smoker at my school apartment so I faked it in an oven at 175°C (350°F) for 40 minutes.  Tonight was mostly jalapenos but I bought a few habaneros and they are quite lively.  Still quite simple and very tasty.

Ihr nennt die Karpfen?  Das sind Berliner Ballen, und in Berlin heissen die Dinger Pfannkuchen und hier in den USA sind das Bismarcks.

Karpfen sind bei uns kleiner, und nicht gefuellt, aber recht knusprig.  Sie sind auch oelgebacken.
Beim Googeln bin ich auf diese Kostbarkeit gestossen!
Nicht Karpfen (das ist ein Fisch), sondern Krapfen! Auch: Faschingskrapfen, ist ja schliesslich auch die richtige Jahreszeit!

Raspberry filled Bismarck habe ich am liebsten, ganz besonders die von der Holiday Tankstelle. Am besten noch ein Rainforest medium roast coffee von dort dazu. 
Ja, ich weiss das ist ein kulinarischer Tiefflug und Ernährungstechnisch ganz und gar nicht sinnvoll aaaaaaaber ich finde es trotzdem ein Knaller und mache das regelmässig wenn ich in den USA bin.

Apropos Holiday Tankstelle, kennt kenn ihr die low cal hotdogs von dort?
Die sind auch suuuuuper lecker und eine Top Alternative falls man mal gerade keine Lust auf einen  Bismarck hat. 
Ach und übrigens ist dort immer dienstags der Kaffee gratis.........

What makes it different from meatloaf?


Compared to American meatloaf there's no ketchup, it has a sour cream sauce made with the drippings, and lots of marjoram.  Sounds like a winning combination to me.  But like any other meatloaf there's plenty of room to experiment.

Probably the best meat loaf I have had was this one (https://www.foodnetwork.com/recipes/tyler-florence/dads-meatloaf-with-tomato-relish-recipe-1917021). The cooked red pepper made is taste similar to stuffed peppers and the texture  was melt in your mouth. We may have put a little to much sauce in the meat because it was difficult to cut a slice without it crumbling.

Connoisseurs de la cuisine Autrichienne will immediately recognize this as a Guglhupf, in this case more specifically a marble Guglhupf.

Sorry, Linde for another Austrian food term for which I am sure you guys in Germany have another name.

Looks like I couldn’t leave my fingers off the oven and had to bake something. As they say all good things in life are either unhealthy, immoral or make one fat, and this Guglhupf is no exception, so let’s ditch the diet!

I would love to share this lovely Guglhupf with you all over coffee or tea in the afternoon, but since nobody lives close to here, I guess I’ll have to eat it by myself...
